Whole Wheat Extra Virgin Olive Oil Banana Bread

1 c. All-Purpose Flour

1/2 c. Whole Wheat Flour

1ts Salt

2ts Baking Powder

1ts Vietnamese Cinnamon - Optional

1/2 c. Dark Mini Chocolate Chips - Optional

6 Tbs All Natural Butter Flavored Extra Virgin Olive Oil

2/3 c. Sugar

2 Large Eggs, Lightly Beaten

1 c. Mashed Very Ripe Bananas (2 Large or 3 Small Bananas)

1/2 c. Toasted Chopped Walnuts or Pecans - Optional

 

Preheat the oven to 350. Thoroughly grease a standard loaf pan with one teaspoon of All Natural Butter Flavored Extra Virgin Olive Oil. In a large bowl, whisk together the All-Purpose Flour, Whole Wheat Flour, Salt, Baking Powder and Cinnamon. In a separate bowl blend together the All Natural Butter Flavored Extra Virgin Olive Oil, Sugar, Eggs. Fold in until combined the Bananas, Walnuts and Chocolate Chips. Combine the wet ingredients in the bowl with the dry ingredients until just incorporated - do not over mix. Scrape the batter into prepared pan and spread evenly. Bake until a toothpick inserted in the center comes out clean, 50 to 60 minutes. Let cool in the pan on a rack for 5 to 10 minutes before unmolding to cool completely on the rack.
